This Is What a Tomato Was Made For

Build It:

Cinnamon Raisin English Muffin

Mayonnaise

Yeehaw Bacon

Iceberg Lettuce

Spinach

Heirloom Beefsteak Tomato

Cinnamon Raisin English Muffin

Did anyone ever make a sandwich while learning to write book reports?  Setting, characters, problem, climax, and solution.  Sound familiar?  I digress.  I was just thinking about that while I made this post.

Christmas in July

Ho ho ho!  Let’s break out the red and green.

So enjoy a nice, refreshing, cold, and festive salad!

Toss together:

  • 3 cups wheat berries, cooked
  • 4 medium tomatoes, chopped
  • 3 large ribs celery, chopped
  • 2 medium cucumbers, chopped
  • 1 can white beans, rinsed

Whisk together:

  • 2 tablespoons honey mustard
  • 2 tablespoons white wine vinegar
  • 1/4 cup olive oil
  • juice of 1 lemon
  • 2 tablespoons fresh dill, chopped
  • salt and pepper to taste

*The measurements are really just estimates, because I just dumped (as always).  Moral of the story:  mix to your taste. Smile

Mix together and allow to marinate a few hours or overnight.

Eat it plain or served over a salad.
