I’m Gonna Marry the Night

That’s all I could sing while I made this dish.

But marrying the ingredients is much better than the night.

Here they are getting all down and dirty in the casserole dish.  Mmmm!

The gooey sweetness was heavenly.  I could hardly believe it was made with wholesome real food.  Whoever says healthy food doesn’t taste good is officially crazy!  Some would serve it as a side dish, but I say it’s good enough to be dessert.

Sweet Tater and Apple Crisp

  • 1 large sweet potato, peeled and cubed
  • 1 apple, peeled, cored and cubed
  • 1 cup walnut halves
  • 1/8 cup brown sugar, packed
  • 1/2 teaspoon cinnamon

Grease 8 x 8 casserole dish.  Toss all ingredients together and spread evenly in casserole dish.

  • 1/2 cup honey Chex, crushed
  • 2 tablespoons whole wheat flour
  • 1/4 cup oats
  • 2 tablespoons butter

Stir together dry ingredients and sprinkle over mixture number one.  Dot with butter.  Bake at 375 degrees for about an hour or until soft, gooey and delicious.
