It’s the easiest cake ever. And since it’s been on my kitchen counter it’s turned into a wonderful addition to several meals.
Just a box of spice cake mix, 1 large grated yellow squash, 1/4 cup oil, 2 eggs, and a handful of walnuts. Look at those pretty yellow flecks! For the glaze I combined 1 cup powdered sugar with 2 tablespoons water. Drizzle to your taste.
Want to know how I’ve used this cake? Of course you do! Obviously I just ate it. Then I got tired of the spiciness and couldn’t eat it alone anymore. So then I sprinkled it in a breakfast bowl. And then on my sautéed zucchini. And then on my salad. And then on my salad with sautéed zucchini that I ate with a tortilla chip. This one was the best. Obviously the salty sweet did it for me.
