Morphed Dinner

This was supposed to be stir fry, but…

Orzo replaced the rice.

Summer squash and tomatoes replaced the broccoli and Bok Choy.

Olive oil and fresh basil replaced the hoisin and teriyaki sauce.

There were a few splashes of soy sauce, just for some saltiness and good measure!

For the meat:

  • brown beef cubes in olive oil
  • add onions and mushrooms
  • cook until caramelized
  • cover and cook on low to tenderize meat
  • salt and pepper to taste
  • add a few tablespoons of pineapple salsa and a few splashes of soy sauce at the end

For the orzo:

  • cook orzo per package directions
  • drain and set aside
  • sauté cubed squash with a pinch of salt and olive oil
  • add tomatoes when squash is mostly done
  • add orzo to squash mixture
  • add olive oil to prevent orzo from sticking and to taste
  • add chopped fresh basil to taste

Enjoy meat mixture on top of orzo mixture.  Drizzle meat juices on top.  Garnish with basil!
