Healthy Feels Good


Roasted beets are my new favorite food.

1.  It made me happy when the organic ones were the exact same price as the regular ones.  I love it when that happens.

2.  Roasting beets are a set it and forget it menu item.  Oil, salt, tinfoil package, 375 degrees for 1 hour.  Rub the skins off and eat.

3.  They are a wonderfully nutritious way to add sweetness to a salad.

4.  They are a pretty color.  And anything they touch becomes a pretty color.  And I mean anything, even inside your body.  Hint hint, I ate these yesterday and was reminded of it today.  Don’t be alarmed or grossed out.  And don’t lie, you think it’s funny.


This salad may be the best one I ever made.

  • mixed greens
  • peppers
  • carrots
  • cucumber
  • beets
  • fresh mozzarella
  • walnuts
  • drizzle of honey
  • spray of olive oil
  • crackles of sea salt


And I made dessert!

Stonyfield low-fat vanilla yogurt, kiwi, half a banana, and almonds.

A perfect sweet yet nutritious ending.
