Sweet Delights

Sometimes simple is best.  And last night’s dinner was very simple.  On the pre-planned menu was pasta with veggies.  That’s a darn simple meal, but not simple enough for me.  I was busy puttering in the yard and didn’t want to come in to start dinner any earlier than I had to.  So I browsed through our fridge and pantry and concocted this sweet delight.

For 1 serving:

  • 1 Sweet Potato (microwaved) – Thanks Kully, for this homegrown treat!!  It was delicious!!
  • 1/2 apple
  • 1/2 cup FF cottage cheese
  • 1/4 cup FF Stonyfield French Vanilla yogurt
  • 2 tablespoons homemade applesauce – Thanks Lori!!  Also delicious!!
  • Sprinkle cinnamon

Pile it on and mix it up.  Steve also added chipotle seasoning for a spicy sweet blend.  I want to keep mine just sweet.

This quick meal far exceeded my expectations!  It was creamy, crunchy, sweet, and tart.  The only downfall was that about halfway through eating it I realized it was a completely fat-free meal!  While it’s important that your fat consumption is not too high, it’s also important it’s not too low!  Your body needs fat to keep you feeling full and energized, to obtain fat soluble vitamins, for healthy skin, and to make hormones (just to name a few). 

For this meal a spoonful of peanut butter would have been delightful.  Using low-fat cottage cheese or yogurt would help.  Or adding some granola for extra crunch would do the trick.
