Layer Up

It’s cold outside!  Here in PA it’s snowing!  But dinner is hot!  It’s old standby Mexican lasagna night.  In a spring form pan…

Layer 1:  whole wheat tortilla, queso, corn, carrots, soy crumbles.

Layer 2:  whole wheat tortilla, cheddar cheese, green peppers, onions, mushrooms.

Layer 3:  whole wheat tortilla, mozzarella cheese, spinach, tomatoes (the Italian layer).

Repeat layer 1 and 2.  Top with one more tortilla and cheese.  If you really like it spicy layer in chili powder, chili flakes, taco seasoning, or cumin to taste.  I felt like letting the sautéed veggies and cheese speak for themselves, so I didn’t layer any spices.  Bake at 350 degrees for 30 minutes, give or take. Cut a wedge and layer on the sour cream and salsa!  I ate it with a romaine salad dressed with lemon juice and salsa.

Strawberries, banana, orange juice, lime juice, milk, yogurt.

Time to layer the blankets over myself on the couch and watch some Veronica Mars.  Smile
