Party In My Mouth

Splurging on one of our favorite meals = party in my mouth!

Usually we just top Multigrain Tostitos with ground turkey, cheddar cheese, lettuce and tomato.  But tonight we are moving up in the world. 

The layers included:

  • Multigrain Tostitos (the usual)
  • Grass fed (grain finished) local ground beef
  • Peppers and onions sautéed in the beef fat
  • Colby jack slices
  • Goat cheese crumbles
  • Sprinkle of shredded mozzarella
  • Red pepper slices

Baked at 350° for about 15 minutes or until the cheese is melty and delicious.

Topped with lettuce, sour cream, and salsa!

The beef was stupendous.   Remember how I said the chicken was more “chicken-y?”  Well the beef was NOT more beef-y.  It was just better.  It was different and for lack of a better word, just tasted fresh.  After we cooked it and realized that it was better, we decided it would make the peppers and onions better too.  Usually I would just sauté them in olive oil, but we were splurging!  Again, what – a – difference; they were sweeter and more flavorful and tender.  Then came the icing on the cake, the goat cheese.  It’s good on anything!  And finally, pretty red peppers and salsa to decorate the top.

I’m definitely a member of the clean plate club tonight!
